I was surprised that wikipedia had no entry for this restaurant. Saving recent history is one of the most important aspects of such a project, imo. Yet I could find little information online about it. I'll take a trip to the library to try and expand this.
I ate there right before it closed, though didn't know how it at the time. It had lost all of its glory but none of its prices and was a big disappointment. Still, for anyone from the mid-19th Century (my parents), it ranks up there with Maxims, etc for the "fancy places to eat in the U.S."
What I'd love to see somewhere, I guess the main page isn't the right place, probably not even here, but more perhaps in something like wikistories or wikianecdotes (:->) would be people's memories of Chez Paul and other famous places. This was once one of the most famous restaurants in Chicago, there must have been countless great stories of times there and yet there's nothing electronically accessible, nor do I know of any (for Chez Paul) in any print books.
