What is a "loosely-franchised" restaurant chain?

It would be good if someone could find a source for the true history of the UNOS chain. I remember when the first store opened in Cambridge, MA; if someone could find it, there is a series of press releases, some of which were posted in the restaurant. Because the truth is, the popular chain had absolutely nothing to do with the "original" restaurant named UNO (and DUO down the street). The Chicago restaurant with the long history was not connected with the chain, and the chain had no presence in Chicago at all. What happened is that some investors (which I think were some guys from Florida, but my recollection is hazy) got the idea to capitalize on the name of the famous Chicago restaurant, and around 1981 or 1982 negotiated the rights to claim an affiliation and call themselves UNOs. But the Chicago restaurant otherwise had nothing to do with the chain restaurant -- different owners, the food was not actually based on the Chicago place, etc. The chain corporation opened the very first UNOs in Cambridge around 1981 or 1982, and expanded from there. While the article here is written to suggest that the headquarters is "now in" Boton, that's misleading -- it was always there! Many years later, the corporation acquired additional rights to the (in reality unrelated) Chicago establishment... then in very recent times (late 90s) they finally bought out the Chicago place and turned it into part of their chain. Then they retconned the corporate history and the history of the Chicago place to correspond to the official story that this article relates. The fictional corporate history retcon just bothers me. (However, I've eaten UNOs chain pizza religously since they first opened in Cambridge and am a fan, which is why I tracked all this since it began.) I couldn't find anything via Google that relates to the truth -- we live in interesting times. Received racist treatment by manger Wyatt on 6-17-23

Manger Wyatt was unbelievable loud/rude and lied about my card not working. I overheard our waitress discussing to another customer about previous customers who had just left when we sat down. It was a thing about people ordering food and at then end not satisfied and asking for things to be taken off the bill. I wanted to take my disabled sister to lunch after shopping.My sister ordered the chicken however 1 side of each chicken breast was literally black and the other side was white. They had the burnt side turned down. I didn’t want to complain seeing that what our new waitress just went through. The mgr actually came through and asked everyone in our area how did they like their food. He didn’t ask us but I saw him eyeing my sisters food as he passed. So when the waitress came back I asked her to please prepare a cheeseburger for my sister. She immediately went into “Oh I can have the mgr take that off the bill because I can see that it’s burnt”. I told her no worries that isn’t necessary it was probably hard for the cook to pan sear the meat. I get it and smiled”. I ordered a small pizza to go for my husband. Our meal was barely 100. When it was time to pay I provided my METAL credit card with no numbers on it just a chip and of course my name. The mgr came back with the waitress and he started talking loud and went into this whole song and dance about how people commit fraud and they need my last 4 of the card. I’m like ok I went to my account on my phone and provided it. Where we were sitting (last booth at the bathroom) there is a register. I can see he didn’t try my card again he just literally yelled vs coming back to the table “That’s not the right number” so I’m holding up my phone saying it is the correct info and I have enough money on that card to pay for everyone’s food and drinks in this restaurant. He got louder. I told him that he was being unnecessarily nasty and I would be complaining. I told him that he just assumed that we didn’t have any money on us. I am a scientist that makes close to 200,00 a year and he was really being a dick. He didn’t even ask to put all the numbers in or even verify who I was through id. Not to mention he avoided us the entire time and only cared about the other customers. There needs to be accountability because he was absolutely disgusting. I still tipped the waitress 20. I had planned on given her more because she was young nice and new and told her so. But that experience was not right. In fact I will be complaining to the BBB or attorney general’s office if nothing is done about this. Because how many other customers has he or this establishment done this too.
