I've had a look through the references and most of them have this person as the key person of their article, and more often than not accompanied by a photo. On that basis, I can't say that the notability tag is justified. I won't remove the tag myself, though, as I've met Pippa Coom on a couple of occasions; whilst that were fleeting meetings, I don't want to get into a COI situation.
