What is The True Difference Between Kraft Paper and Butcher Paper?

The linked article is

badly written, if you actually expect it to live up to it's title
intended for paper professionals instead of the general public
advertises the author's brand of paper as the best

The total relevant content, which might be added in to the article can be summarized as follows:

butcher's paper is approved for contact with food, kraft paper is usually not
butcher's paper is usually (but not always) white, kraft paper is usually (but not always) brown
the process of making the two types of paper starts out similar, then somehow differs
