Found this, with a bunch of historical information worth incorporating:

Lewis, Samuel (1837). "Cahirconlish". A Topographical Dictionary of Ireland. London: S. Lewis & Co. – via LibraryIreland.

This seems largely the basis of The Cork Examiner article below.

Probably also listed in the following with some details, but I'm having trouble finding a free copy of vol. 1:

Cassell's Gazetteer of Great Britain and Ireland. London/Paris/New York/Melbourne: Cassell & Co. 1899–1900.

Same with this; it is probably in vol. 2 or 3:

Newspaper article with a lot on the early history of the town:

"The walled city of Caherconlish". The Cork Examiner. 9 November 1970 – via Logainm.ie: Placenames Database of Ireland.

This was obviously drawing on a bunch of local-to-national history sources in addition to Lewis (above), but it's unclear what they might be. This newspaper piece has details not found in the Lewis piece.
