Best way to extend shelf life of guacamole?

Hello, Viriditas. Internet sources that appear to have some credibility recommend adding lemon juice or lime juice to the surface of the stored guacamole, which are obviously acidic and fit in with Mexican cuisine. Pickle juice is also acidic so it may work just as well. The main factor is to minimize air exposure, so cover the guacamole with plastic wrap pushed down onto the surface, or put it in a zip-loc bag with all the air squeezed out. Using avocados that are just ripe enough to be mashed buys you a day or two. Pickle brine should work (at least in theory), but if you know in advance you are going to store the guacamole in the fridge for later use, leave out the lime juice and salt when mashing and instead pour these over the mash in the container before storing in the fridge. Gently shake the container twice a day to make sure the surface remains covered by the liquid. After taking the pre-prepared guacamole out, mix well. If you have more avocados than you can use, you can put the avocados in a closed freezer bag and freeze them whole.  --Lambiam 07:59, 6 June 2023 (UTC)[reply]

If you are really into saving foods, invest in a nitrogen sealer. It preserves just about everything because it forces all oxygen out of the packaging, keeping it from spoiling anytime soon. A nitrogen seal is how guacamole packs in the store can sit on the shelf for weeks on end and not go bad.
