Carmela's Ziti Florentine

  • 1 pound uncooked ziti pasta
  • 6 tbsp. butter
  • 2 tbsp. lemon juice
  • 1/4 cup Gorgonzola cheese, crumbled
  • salt and pepper to taste
  • 3 cups fresh spinach leaves, torn
  • 2 tbsp. Parmesan cheese, grated

Cook ziti al dente according to package directions. While that's cooking, melt butter in a large skillet. Add lemon juice and Gorgonzola cheese. Reduce heat and stir until cheese is melted. Season with salt and pepper. Drain pasta, and add that with spinach leaves to melted cheese mixture in skillet. Cook until heated completely and well tossed. Top with Parmesan cheese and serve immediately. Serves 6-8. Buon consumo!
