This course will illustrate the ways that African Americans have interacted with the farmed environment (crops, agricultural labor), domestic service (residential, commercial), and cookery (home, restaurant) to gain social mobility and civil rights. I hope to set up a visit to at least one site/community/restaurant space in St. Louis exemplary of the issues surrounding Black foodways in order to understand food—its production, its preparation and its distribution—as nourishment, venue for social justice, and expressive culture. Students will learn to write and edit Wikipedia articles to contribute to a greater understanding of Black foodways in the United States and beyond.
