This is not nonsense. Stryker really appears in Shujinko's ending in MK Unchained.

Look next to Sindel in top right corner of the picture. Now if you wish pop in the ps2/xbox/gamecube version of Mortal Kombat Deception and notice that Stryker does not appear.
