Because they are unsourced. And no, made up source don't count either (ones that you copy from elsewhere in the article and hope that people won't check). Show that these moves are signature moves and they won't be removed. We who have worked hard to keep some kind of a quality in these articles care. Sourcing is one of the basics in this place and people who say stuff like "I don't care about sources" probably shouldn't be here. The "In wrestling" section is just a basic set of signature moves, not a "complete" list of moves, like you say. We could never list all moves that any given wrestler has done.
