Vitamin A is a group of fat soluble organic compound that includes retinol, retinal and retinyl Ester and Pro vitamin A carotenoids like beta–carotene.

There are two forms of Vitamin A that are found in food.

1:- The source of vitamin A that obtained from animal is either retinol or bound to fatty acid to become a retinyl Easter.

Retinol is converted into retinal that is the most active form of Vitamin A, with the help of an enzyme called alcohol dehydrogenase.

Vitamin A is stored in human liver in the form of retinyl Ester.

2:- another source of Vitamin A which come from plants are carotenoids. There are more than 600 different types of carotenoids, but few carotenoids that can be converted into vitamin A in our body. They are :- Alpha— carotene, beta—carotene,gamma—carotene and beta—cryptoxanthin.

carotenoids are plant pigments that produce the bright yellow, red and Orange colour in plants, vegetable and fruits.

carotenoids are classified into two main groups xanthophyll and carotene. Both types of carotenoids have antioxidant properties.

provitamin A carotenoids includes alpha—carotene, beta—carotene and beta—cryptoxanthin.

Non—provitamin A carotenoids includes lutein, zeaxanthin and Lycopene.
