The seafood tofu (sān xiān dòu pí) is one of the most famous breakfasts for Hu Bei.[1][2]

Seafood tofu is named for the filling of fresh meat, eggs and shrimp. In addition, there is another saying that seafood tofu is filled with fresh meat, fresh mushroom and fresh bamboo shoots.

Stuffed between the top and bottom layer is a filling made from rice, and usually no more than three extra ingredients - typically pork, mushrooms, and bamboo shoots. The layers are either tofu skins or pancake lookalikes consisting of mung beans, flour, milk, and eggs. Once assembled, doupi is pan-fried until golden, cut up into small pieces, then sprinkled with chopped scallions and served in small bowls.[3]

Wuhan has a restaurant named “Lao Tong Cheng”, which is famous for the seafood tofu. In Lao Tong Cheng, the seafood tofu not only contains the meat, egg and shrimp, but also the pork heart, pork belly, mushroom, bamboo shoots, barbecued meat, etc. The filling is exquisite, and the frying is fine. After the frying is done, the oil is shiny and the color is yellow and fragrant.[4]
