Martin Hadden is a Roux Scholarship winner, Group Executive Chef for Historic Sussex Hotels in Sussex, United Kingdom[1]

He was awarded a coverted Michelin Star for his restaurant, The Priory House in 2001 after buying it with the intention of winning one.

Biography

Roux Scholarship

In 1989 Martin Hadden won a scholarship to be trained with the french chef Michel Roux when he was aged just 19[2].

He was the 6th person to win the scholarship since it was started in 1984, and he was one of the youngest chefs to win the scholarship.

Michelin Star

In 2001 Martin Hadden won a Michelin Star for his Stoke-Sub-Hamdon (Somerset) restaurant, The Priory House.

Ironically, he had just bought the restaurant with the intention of winning a Star when he learnt that he had won a Michelin star for Ockenden Manor, where he had been the head chef.[3]

Food Experimentation

In June 2009 Martin Hadden and the Head Chef of The Bailiffscourt Hotel, Russell Williams decided to try to cure their own parma-style hams by hanging them in the trees on the grounds of the Bailiffscourt Hotel in Climping with varied success[4].

Currently the hams are not for public consumption, but the experimentation continues[5].
