editI am a researcher in polymer science and engineering. I have a long-term research focus on biopolymers including polysaccharides (e.g. starch, chitosan, cellulose, alginate) and proteins (e.g. gelatin) for food and materials applications. While I usually read Wikipedia, I also edit it to make it more useful.
