From what I gathered at Databasefootball.com, the following players played for the Redskins during the 1991 NFL season: John Brandes, Travis Curtis, Terry Hoage, Jimmie Johnson, Joe Johnson, Markus Koch, Ed Simmons, Ralph Tamm, and Clarence Vaughn. But I dont know if any of them played in the Super Bowl or the numbers they had. Is there a site or something your using? Also, I could not find any info on Ed Williams, are you sure he was on the team?
