"It is possibly from pope's eye, "the gland surrounded with fat in the middle of the thigh of an ox or a sheep"."

I'm pretty sure that this passage is nonsense, as, anatomically, the 'round' in such a piece of meat is actually a slice of the femur - or thigh bone - with its marrow contents.

can anyone offer an explanation?

I understand the need for improving the page, rather than a discussion of the actual contents, but this is enough of a "HUH?" that I thought it was warranted.
