It is a shame to point out that the Do you know? column is wrong. Here I summarize the main points in order to avoid further misunderstanding.
First of all, Okinawa soba is a modern product. There was no such thing in Ryūkyū.
Ryūkyū's records contain some fragmentary references to some kinds of noodles, but no one proves that they evolved into Okinawa soba.
No source was cited by the original author Ginstrom (talk·contribs) in 2006[1]. I suspect that s/he, or his/her unspecified source, misunderstood a historical source in which its author, who was a very distant relative of the king, stated that he ate soba. Soba in this context refers to buckwheat noodles, not Okinawa soba.
