In this graph the relative sweetness of invert sugar is wrong. The sweetness should be higher than the sweetness of sucrose. Invert sugar is 50% fructose and 50% glucose. Since fructose is so much sweeter than sucrose, the combination fructose & glucose is sweeter than sucrose.
