I've got a batch of Elderflower Cordial cooking/brewing right now. The ingredients are simple. My recipe came from my cousin, C. Ewington of North York Moors:

ELDERFLOWER CORDIAL

2lb 3oz caster sugar 1 1/2 pints boiling water 1 1/2 oz citric acid 15 large elderflower heads, flowers snipped from stems 2 lemons sliced

Method

Put the caster sugar into a large bowl, add the boiling water and stir until all the sugar has dissolved. Stir in citric acid, add elderflowers and sliced lemons.

Cover the bowl and leave to stand for five days, stirring daily.

Strain through a double-thickness muslin into a large bowl. Pour into sterilised bottles. Cork the bottles and keep in the refrigerator. It will keep for up to a year.

Dilute one part cordial with two to three parts soda, tonic or lemonade, add ice.
