English: Reestit mutton in butcher's window, Lerwick Reestit mutton is salted, air-dried, smoked mutton. Traditionally, the meat was soaked in brine and hung in the rafters above a peat fire, and it is probably as close to being Shetlands national dish as is possible, although it is a generally agreed by non-native Shetlanders that it is an acquired taste.
