Summary

Description
English: Ultra-processed foods contain food colors, vegetable oils, refined sugars such as high fructose corn syrup (HFCS) and organophosphate (OP) and other pesticide residues. Consumption of ultra-processed foods leads to inorganic mercury (Hg) and lead (Pb) exposures and dietary deficits in important fatty acids (e.g. DHA, EPA) and micro-nutrients such as selenium (Se). Dietary consumption of HFCS and food colors, yellow #5 and yellow #6, leads to mineral imbalances such as zinc (Zn) and/or calcium (Ca) losses and copper (Cu) gain. Inadequate zinc stores and copper gain can disrupt metallothionein (MT) gene function and this results in the bio-accumulation of heavy metals in the blood stream which creates oxidative stress and changes in DNA methylation patterns that may impact child health and learning across generations. Inadequate calcium stores can lead to the bio-accumulation of Pb in the bloodstream and inhibit paraoxonase-1 (PON-1) gene function which is needed to detoxify the neurotoxic OP residues in the food supply. Without adequate PON1 gene activity, dietary exposures to OP pesticide residues result in oxidative stress and changes in DNA methylation patterns that impact child health and learning across generations. Public domain
The Public Domain Mark (PDM) is not a copyright license, but a symbol used to indicate that a work is in the public domain. When it is applied by the author or the copyright holder, community consensus has decided such works as being public domain in the US and countries where it is legally possible to release own work to the public domain. In the countries where this is not possible, the copyright status of the work remains undetermined.
If a file is tagged with Public Domain Mark by someone other than the author or the copyright holder, a more specific copyright tag such as one found at Commons:Copyright tags/General public domain must be applied. If this is your own work, please use {{Cc-zero}} instead.
