English: In the bush the millet stalks are burnt down to make indigenous 'vinegar', Tireli, Mali 1980. In the picture we see how ashes are produced. Afterwards water is sprinkled over it. The filtrate is salty, a mixture of potassium and sodium salts, which are used to make sauce; French speaking Dogon call it 'vinaigre indigène' (indigenous vinegar), but no one can mistake it for regular vinegar.
Français : Dans la brousse, les tiges de millet sont brûlées pour produire du «vinaigre» indigène, Tireli, Mali 1980. Dans l'image, on voit comment des cendres sont produites. De l'eau y est aspergée. Le filtrat est salé, un mélange de sels de potassium et de sodium, qui est utilisé pour en faire de la sauce. Les Dogon francophones l'appellent «vinaigre indigène», mais personne ne peut le confondre avec du vinaigre ordinaire.
Nederlands: In de bush worden de giersthalmen afgebrand om inheems 'azijn' van te maken, Tireli, Mali 1980. Het gaat om het maken van as, die wordt besprenkeld, en het filtraat is zoutig, een mengsel van kalium en natriumzouten. Dat wordt gebruikt voor de saus; Frans sprekende Dogon noemen het 'vinaigre indigène', maar niemand kan het verwarren met reguliere azijn.
