Bezgovo cvrtje is a Slovenian national dish with elder flowers. Flowers are wrapped in dough and fried in oil. Served with cranberry compote.

Preparation

  • 1/4 l warm milk
  • 22 dag flour
  • half spoon of salt
  • 1 spoon of sugar
  • 3 yolks
  • 3 whipped eggs
  • 6 to 12 elder flowers
  • oil for fry

Twirl milk with flower and yolks, add sugar and salt. Mix whipped eggs. Rinse elder flowers with water, strain it and steep them into dough. Fry them in hot oil (not too long, until yellow colour). Strew with sugar.
