Redneck Caviar
Redneck Caviar aka boiled peanuts is a popular snack on roadside stands throughout the southern U.S.A. A large pot or vat is used to slow cook peanuts in the shell in a salt and water solution. This is usually served hot in a bag to be eaten right away. Even gas stations will have a crockpot of boiled peanuts. Cajun flavored is sometimes an option. Roadside stands will often advertise in advance with quaint handmade signs, using abbreviations such as “boiled p-nuts.”
