It seems pasteurization temperatures (and times) vary. The most commonly used pasteurization temperature in the U.S. is said to be 72 °C, which is lower than the temperature called for with "scalded milk".Gzuufy (talk) 07:55, 19 May 2011 (UTC)Reply
