Apparantly mustard is an important part of the dish, yet it isn't listed in the recipe, and if cucumber isn't authentic, why is it in this (mustardless) recipe?

What do you do with it? edit

If this is a condiment, is it placed on other food? I love to eat raita, but I don't know how it is meant to be eaten (or how it is usually eaten).
