Many words in modern Greek, especially in Cretan dialects, derive from Italian/Venetian. The word "graviera" is a distortion of "groviera", which is Italian for the cheese known in French as "gruyère". The article seems to put in doubt this derivation.

I have now added the crucial missing information that was noted anonymously in 2011, along with a good published reference.
