Crystal is important because it is probably (judging by amounts I see moved at food stores) the most heavily consumed "Louisiana hot sauce" which is naturally thickened and contains no xanthan gum, nothing but peppers, vinegar, and salt (read the label), making it a major competitor for Tabasco. Generic "Louisiana hot sauce (like Crystal, Texas Pete, Louisiana, etc.)" should not be confused with Tabasco. They are also not nearly as hot as Tabasco, nor as expensive, and are used a lot in cooking jambalaya, gumbo, and such where Tabasco is more of a table condiment. They taste differently.
