Wine is an alcoholic beverage made from fermentation of grape juice. The natural chemical balance of grapes is such that they can ferment without the addition of sugars, acids, enzymes, or other nutrients. Although fruits other than grapes can also be fermented, the resultant wines are normally named after the fruit from which they are produced (for example, apple wine) and are known as fruit wine (or country wine). Others, such as barley wine and rice wine (e.g. sake), are made from starch-based materials and resemble beer more than wine; ginger wine is fortified with brandy. In these cases, the use of the term "wine" is a reference to the higher alcohol content, rather than the production process. The commercial use of the word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions. Wine is produced by fermenting crushed grapes using various types of yeast which consume the sugars found in the grapes and convert them into alcohol. Various varieties of grapes and strains of yeasts are used depending on the types of wine produced.

Wine stems from an extended and rich history dating back about 8,000 years and is thought to have originated in present-day Georgia or Iran. Wine is thought to have appeared in Europe about 6,500 years ago in present-day Bulgaria and Greece and was very common in ancient Greece and Rome; the Greek god Dionysos, and his Roman counterpart Liber represented wine. Barolo, like most nebbiolo-based wines, is known for its light color and lack of opacity.

Barolo (/bəˈroʊloʊ/ bə-ROH-loh, US also /bɑːˈ-/ bar-OH-loh, Italian: [baˈrɔːlo]; Piedmontese: bareul [baˈrøl]) is a red denominazione di origine controllata e garantita (DOCG) wine produced in the northern Italian region of Piedmont. It is made from the nebbiolo grape and is often described as one of Italy's greatest wines.

The zone of production extends into the communes of Barolo, Castiglione Falletto, Serralunga d'Alba and parts of the communes of Cherasco, Diano d'Alba, Grinzane Cavour, La Morra, Monforte d'Alba, Novello, Roddi, Verduno, all in the province of Cuneo, south-west of Alba. Although production codes have always stipulated that vineyards must be located on hillsides, the most recent revision of the production code released in 2010 goes further, categorically excluding valley floors, humid and flat areas, areas without sufficient sunlight, and areas with full-on northern exposures. Glasses of white wine

White wine is a wine that is fermented without skin contact. The colour can be straw-yellow, yellow-green, or yellow-gold. It is produced by the alcoholic fermentation of the non-coloured pulp of grapes, which may have a skin of any colour. White wine has existed for at least 4,000 years.

The wide variety of white wines comes from the large number of varieties, methods of winemaking, and ratios of residual sugar. White wine is mainly from "white" grapes, which are green or yellow in colour, such as the Chardonnay, Sauvignon blanc and Riesling. Some white wine is also made from grapes with coloured skin, provided that the obtained wort is not stained. Pinot noir, for example, is commonly used to produce champagne. (Full article...)

Merlot grapes on the vine

Merlot (/ˈmɜːrloʊ/ MUR-loh) is a dark blue–colored wine grape variety that is used as both a blending grape and for varietal wines. The name Merlot is thought to be a diminutive of merle, the French name for the blackbird, probably a reference to the color of the grape. Its softness and "fleshiness," combined with its earlier ripening, make Merlot a popular grape for blending with the sterner, later-ripening Cabernet Sauvignon, which tends to be higher in tannin.

Along with Cabernet Sauvignon, Cabernet Franc, Malbec and Petit Verdot, Merlot is one of the primary grapes used in Bordeaux wine, and it is the most widely planted grape in the Bordeaux wine regions. Merlot is also one of the most popular red wine varietals in many markets. This flexibility has helped to make it one of the world's most planted grape varieties. As of 2004, Merlot was estimated to be the third most grown variety at 260,000 hectares (640,000 acres) globally.

Bordeaux wine (Occitan: vin de Bordèu, French: vin de Bordeaux) is produced in the Bordeaux region of southwest France, around the city of Bordeaux, on the Garonne River. To the north of the city, the Dordogne River joins the Garonne forming the broad estuary called the Gironde; the Gironde department, with a total vineyard area of 110,800 hectares, is the largest wine-growing area in France.

Average vintages produce over 700 million bottles of wine, ranging from large quantities of daily table wine to some of the world's most expensive and prestigious wines. The vast majority of wine produced in Bordeaux is red (sometimes called "claret" in Britain), with sweet white wines (most notably Sauternes), dry whites, and (in much smaller quantities) rosé and sparkling wines (Crémant de Bordeaux) collectively making up the remainder. Mauricio González-Gordon y Díez, Marquis of Bonanza (18 October 1923 – 27 September 2013) was a Spanish sherry maker and a conservationist. Most of his life he worked for the family company, González Byass, where he increased its exports to a worldwide level. His family estate was located in the wetland region called Doñana in southern Spain and was threatened by drainage efforts in the early 1950s. González-Gordon with the help of researchers and international support managed to preserve the site, while at the same time donating some of his family land to the conservation effort. Afterward, González-Gordon became one of the founders of the Spanish Ornithological Society in 1954. His conservation efforts for Doñana culminated in the creation of the Doñana National Park in 1969. The area was designated a UNESCO World Heritage Site in 1994. (Full article...)

Montalcino

Brunello di Montalcino is a red DOCG Italian wine produced in the vineyards surrounding the town of Montalcino, in the province of Siena, located about 80 km south of Florence, in the Tuscan wine region. Brunello, a diminutive of bruno (lit. 'brown'), is the name that was given locally to what was believed to be an individual grape variety grown in Montalcino. In 1879 the province of Siena's Amphelographic Commission determined, after a few years of controlled experiments, that Sangiovese and Brunello were the same grape variety, and that the former should be its designated name. In Montalcino the name Brunello evolved into the designation of the wine produced with 100% Sangiovese.

In 1980, Brunello di Montalcino was among the four wines awarded the first denominazione di origine controllata e garantita (DOCG) designation. Today it is one of Italy's best-known and most expensive wines. (Full article...)

Monica Larner is a wine critic and writer based in Rome. She is the Italian Reviewer for The Wine Advocate and eRobertParker.com, the bimonthly wine publication and website founded by wine critic, Robert Parker. She was selected in 2013 by Parker to replace the departing Antonio Galloni.

In 2003, Larner was selected to be the very first dedicated Italian wine editor for Wine Enthusiast. She is also a two-time winner of the Best Young Journalist of the Year (2008, 2010), one of the top honors given out yearly at the VinItaly exposition. In 2012, Larner won Best International Journalist also presented by the Comitato Grandi Cru d'Italia panel at VinItaly. Champagne (/ʃæmˈpeɪn/, French: [ʃɑ̃paɲ]) is a sparkling wine originated and produced in the Champagne wine region of France under the rules of the appellation, which demand specific vineyard practices, sourcing of grapes exclusively from designated places within it, specific grape-pressing methods and secondary fermentation of the wine in the bottle to cause carbonation.
The grapes Pinot noir, Pinot meunier, and Chardonnay are used to produce almost all Champagne, but small amounts of Pinot blanc, Pinot gris (called Fromenteau in Champagne), Arbane, and Petit Meslier are vinified as well. (Full article...)

Carménère grapes

The Carménère grape is a wine grape variety originally planted in the Médoc region of Bordeaux, France, where it was used to produce deep red wines and occasionally used for blending purposes in the same manner as Petit Verdot.

A member of the Cabernet family of grapes, the name "Carménère" originates from the French word for crimson (carmin) which refers to the brilliant crimson colour of the autumn foliage before leaf-fall. The grape is also known as Grande Vidure, a historic Bordeaux synonym, although current European Union regulations prohibit imports under this name into the European Union. Along with Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec and Petit Verdot, Carménère is considered one of the original six red grapes of Bordeaux. (Full article...)

Wine and food matching is the process of pairing food dishes with wine to enhance the dining experience. In many cultures, wine has had a long history of being a staple at the dinner table and in some ways both the winemaking and culinary traditions of a region will have evolved together over the years. Rather than following a set of rules, local cuisines were paired simply with local wines. The modern "art" of food pairings is a relatively recent phenomenon, fostering an industry of books and media with guidelines for pairings of particular foods and wine. In the restaurant industry, sommeliers are often present to make food pairing recommendations for the guest. The main concept behind pairings is that certain elements (such as texture and flavor) in both food and wine interact with each other, and thus finding the right combination of these elements will make the entire dining experience more enjoyable. However, taste and enjoyment are very subjective and what may be a "textbook perfect" pairing for one taster could be less enjoyable to another.

While there are many books, magazines and websites with detailed guidelines on how to pair food and wine, most food and wine experts believe that the most basic element of food and wine pairing is understanding the balance between the "weight" of the food and the weight (or body) of the wine. Heavy, robust wines like Cabernet Sauvignon can overwhelm a light, delicate dish like a quiche, while light-bodied wines like Pinot Grigio would be similarly overwhelmed by a hearty stew. Beyond weight, flavors and textures can either be contrasted or complemented. From there a food and wine pairing can also take into consideration the sugar, acid, alcohol and tannins of the wine and how they can be accentuated or minimized when paired with certain types of food. Languedoc-Roussillon wine, including the vin de pays labeled Vin de Pays d'Oc, is produced in southern France. While "Languedoc" can refer to a specific historic region of France and Northern Catalonia, usage since the 20th century (especially in the context of wine) has primarily referred to the northern part of the Languedoc-Roussillon region of France, an area which spans the Mediterranean coastline from the French border with Spain to the region of Provence. The area has around 700,000 acres (2,800 km²) under vines and is the single biggest wine-producing region in the world, being responsible for more than a third of France's total wine production. A sommelier (/ˈsɒməljeɪ/ or /sʌməlˈjeɪ/ or /sɒˈmɛlijeɪ/; French pronunciation: [sɔməlje]), or wine steward, is a trained and knowledgeable wine professional, normally working in fine restaurants, who specializes in all aspects of wine service as well as wine and food pairing. The role of the sommelier in fine dining today is much more specialized and informed than that of a wine waiter. A wine fault is a sensory-associated (organoleptic) characteristic of a wine that is unpleasant, and may include elements of taste, smell, or appearance, elements that may arise from a "chemical or a microbial origin", where particular sensory experiences (e.g., an off-odor) might arise from more than one wine fault. Wine faults may result from poor winemaking practices or storage conditions that lead to wine spoilage.^{[citation needed]}
In the case of a chemical origin, many compounds causing wine faults are already naturally present in wine, but at insufficient concentrations to be of issue, and in fact may impart positive characters to the wine; however, when the concentration of such compounds exceed a sensory threshold, they replace or obscure desirable flavors and aromas that the winemaker wants the wine to express. Pinot noir (French: [pino nwaʁ]) or Pinot nero is a red-wine grape variety of the species Vitis vinifera. The name may also refer to wines created predominantly from pinot noir grapes. The name is derived from the French words for pine and black. The word pine alludes to the grape variety having tightly clustered, pinecone–shaped bunches of fruit.

Pinot noir is grown around the world, mostly in cooler climates, and the variety is chiefly associated with the Burgundy region of France. Pinot noir is now used to make red wines around the world, as well as champagne, sparkling white wines such as the Italian Franciacorta, and English sparkling wines. Regions that have gained a reputation for red pinot noir wines include the Willamette Valley of Oregon; the Carneros, Central Coast, Sonoma Coast, and Russian River AVAs of California; the Elgin and Walker Bay wine regions of South Africa; the Mornington Peninsula, Adelaide Hills, Great Southern, Tasmania, and Yarra Valley in Australia; and the Central Otago, Martinborough, and Marlborough wine regions of New Zealand. Washington wine is a wine produced from grape varieties grown in the U.S. state of Washington. Washington ranks second in the United States (behind California) in the production of wine. By 2017, the state had over 55,000 acres (220 km²) of vineyards, a harvest of 229,000 short tons (208,000 t) of grapes, and exports going to over 40 countries around the world from the 940+ wineries located in the state. While there are some viticultural activities in the cooler, wetter western half of the state, the majority (99.9%) of wine grape production takes place in the shrub-steppe eastern half. The rain shadow of the Cascade Range leaves the Columbia River Basin with around 8 inches (200 mm) of annual rain fall, making irrigation and water rights of paramount interest to the Washington wine industry. Viticulture in the state is also influenced by long sunlight hours (on average, two more hours a day than in California during the growing season) and consistent temperatures.

The early history of the Washington wine industry can be traced to the introduction of Cinsault grapes by Italian immigrants to the Walla Walla region. Grapes are not indigenous to the Columbia Valley viticultural area, but both Vinifera and Labruscavines are grown. The oldest planted Vinifera vines still in existence were planted by German immigrants in the Tampico vicinity, west of Union Gap, in 1871. Others were planted in the Kennewick area in 1895, and in the Walla Walla area by 1899. Planting of premium Vinifera grapes began in the Columbia Valley in the mid-1960s. By 1981 there were over 6,610 acres (2,675 ha) of Vinifera grapes including 2,700 acres (1,093 ha) of cultivated vineyards. In the 1950s and 1960s, the precursors of the state's biggest wineries (Chateau Ste. Michelle and Columbia Winery) were founded. Throughout the rest of the 20th century, the wine world discovered a new aspect of Washington wines with each passing decade – starting with Rieslings and Chardonnays in the 1970s, the Merlot craze of the 1980s and the emergence of Cabernet Sauvignon and Syrah in the 1990s. Washington has twenty federally defined American Viticultural Area (AVA)s with all but one located in Eastern Washington. The largest is the Columbia Valley AVA, which extends into a small portion of northern Oregon and encompasses most of the states's AVAs. They are Lewis-Clark Valley AVA, the Ancient Lakes AVA, Walla Walla Valley AVA, which encompasses Oregon's The Rocks District of Milton-Freewater AVA, Horse Heaven Hills AVA, the Wahluke Slope AVA, Lake Chelan AVA, Naches Heights AVA, and the Yakima Valley AVA, which in turn also encompasses the Rattlesnake Hills AVA, Snipes Mountain AVA, the Red Mountain AVA, Goose Gap AVA and the Candy Mountain AVA. The Columbia Gorge AVA is west of the Columbia Valley AVA. As of 2023, Washington's only AVA located west of the Cascades is the Puget Sound AVA and a petition has been submitted to Alcohol and Tobacco Tax and Trade Bureau (TTB) proposing a new American Viticultural Area named "Mount St. Helens" covering parts of Clark County, Cowlitz County, Skamania County and Lewis County. Abreu Vineyards is a cult winery in Napa Valley, California founded by well-known viticulturist David Abreu.

David Abreu, a third-generation rancher from St. Helena, California and graduate of the Viticulture and Enology program at UC Davis, founded Abreu Vineyards in 1980 after working briefly at Caymus Vineyards. That year he formed David Abreu Vineyard Management, working with pioneering winemaker Richard Forman to manage ranching operations at Inglenook Winery.

Abreu and Forman became friends and traveled frequently to Bordeaux, where they observed French winemaking operations. They brought back French rootstock, trellis designs, and Bordelais planting and farming techniques.

Abreu's fame spread as Other wineries hired Abreu's company to plant and manage ranching operations. By 1999 he was considered the premier viticulturist for premium grapes in Napa Valley. Abreu's company has raised grapes for some of the most respected wineries in Napa and Sonoma Valleys, and in 2006 Abreu was hired to replant vineyards at Screaming Eagle Winery and Vineyards.

Wine critic Robert M. Parker, Jr. included Abreu in his 1998 list of the "most influential wine personalities of the last 20 years." (Full article...)
