Introduction
Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtain food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, reflecting local conditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)
The Bidni, which is also referred to as Bitni, is an olive cultivar from the Mediterranean island of Malta. The fruit is small in size, hearty with a "violet colour", and is renowned for its superior oil which is low in acidity. The latter is generally attributed to the poor quality alkaline soil found on the Maltese Islands. As an indigenous olive cultivar, the Bidni has developed a unique DNA profile, and is believed to be among the most ancient species on the island, triggering local authorities to declare some of these ancient trees as "national monuments", and as having an "Antiquarian Importance", a status which is enjoyed by only a handful of other species. The Swiss Cheese Union (German: Schweizer Käseunion AG, pronounced [ˈʃvaɪtsər ˈkɛːzə.uˌni̯oːn aːˈɡeː]) was a marketing and trading organization in Switzerland, which served as a cartel to control cheese production from 1914 to 1999. To this end, the Swiss Cheese Union mandated production be limited to only a few varieties, chiefly Gruyere and Emmental, and bought the entire production and distribution of cheese at prices set by the Swiss Federal Council. It also coordinated the national and international marketing for these varieties of cheese.
The Swiss Cheese Union was particularly successful in campaigning for cheese fondue, which became a very popular dish in Switzerland and abroad. It is now often considered to be the Swiss national dish. Before that, it was only a regional dish. (Full article...)Selected cuisine -

The history of Jewish cuisine begins with the cuisine of the ancient Israelites. As the Jewish diaspora grew, different styles of Jewish cooking developed. The distinctive styles in Jewish cuisine vary according to each community across the Ashkenazi, Sephardi, and Mizrahi diaspora groupings; there are also notable dishes within the culinary traditions of the standalone significant Jewish diaspora communities from Greece, Iran, and Yemen. Soy sauce (sometimes called soya sauce in British English) is a liquid condiment of Chinese origin, traditionally made from a fermented paste of soybeans, roasted grain, brine, and Aspergillus oryzae or Aspergillus sojae molds. It is recognized for its pronounced umami taste.
Soy sauce was created in its current form about 2,200 years ago during the Western Han dynasty of ancient China. Since then, it has become an important ingredient in East and Southeast Asian cooking as well as a condiment worldwide. (Full article...)

A French dip sandwich, also known as a beef dip, is a hot sandwich consisting of thinly sliced roast beef (or, sometimes, other meats) on a "French roll" or baguette. It is usually served plain but a popular variation is to top with Swiss cheese, onions, and a dipping container of beef broth produced from the cooking process (termed au jus, "with juice"). Beef stock, a light beef gravy, or beef consommé is sometimes substituted. The sandwich is an American invention, with the name seeming to refer to the style of bread, rather than any French origin. Although the sandwich is most commonly served with a cup of jus or broth on the side of the plate, into which the sandwich is dipped as it is eaten, this is not how the sandwich was served when it was originally developed. Human cultivation and use of saffron spans more than 3,500 years and extends across cultures, continents, and civilizations. Saffron, a spice derived from the dried stigmas of the saffron crocus (Crocus sativus), has through history remained among the world's most costly substances. With its bitter taste, hay-like fragrance, and slight metallic notes, the apocarotenoid-rich saffron has been used as a seasoning, fragrance, dye, and medicine.
The wild precursor of domesticated saffron crocus was likely Crocus cartwrightianus, a plant native to mainland Greece, Euboea, Crete, Skyros and some islands of the Cyclades. This species has been used as a wild source of saffron. A study reported in 2019 that the authors considered that a cross between two cytotypes of Crocus cartwrightianus was responsible for the emergence of Crocus sativus. This was probably a unique or very rare event as there is no genetic diversity in commercial saffron today. Another study in 2019 showed that a population of Crocus cartwrightianus near Athens in Attica was the closest match to the theoretical ancestors of Crocus sativus. (Full article...)Selected image –

Milton Snavely Hershey (September 13, 1857 – October 13, 1945) was an American chocolatier, businessman, and philanthropist.
Trained in the confectionery business, Hershey pioneered the manufacture of caramel, using fresh milk. He launched the Lancaster Caramel Company, which achieved bulk exports, and then sold it to start a new company supplying mass-produced milk chocolate, previously a luxury good. (Full article...)
