Italiano: Una panoramica generale dei principali componenti nutrizionali che modulano sia il microbiota intestinale che il sistema immunitario. Per come è rappresentata, la dieta mediterranea, ricca di alimenti di origine vegetale, presenta polifenoli, grassi di alta qualità (MUFA e PUFA ad alto contenuto di omega 3), micronutrienti, come vitamine e oligoelementi, e fibre alimentari che, in modo adeguato e matrice alimentare completa, determinerà le loro proprietà benefiche nel mantenimento dell'eubiosi del microbiota intestinale e dei suoi prodotti metabolici, insieme all'integrità della barriera intestinale e alla tolleranza immunitaria. D'altra parte, le diete occidentali e gli alimenti ultra trasformati, caratterizzati da bassi livelli di fibre alimentari o micronutrienti, presentano una pletora di componenti nutrizionali, inclusi i carboidrati raffinati (zucchero e cereali raffinati), grassi di bassa qualità (acidi grassi trans e un eccessivo rapporto omega 6 / omega 3 dovuto agli oli raffinati), sale e additivi malsani (principalmente dolcificanti), e infine consumo eccessivo di carne rossa e lavorata. Inoltre, comprendono una matrice alimentare povera che avrà effetti dannosi sulla barriera intestinale, portando a permeabilità intestinale, disbiosi intestinale e metaboliti alterati, portando inoltre a un'infiammazione locale e alla presenza di LPS nel flusso sanguigno che contribuirà all'endotossiemia sistemica e infiammazione cronica.
